Alas, school is starting, and the long, fun, free days of summer are coming to a close. As I prepare for this coming school year with my kids, I find myself looking for easy meal ideas. I really can’t have too many of these. Hence, the idea of Breakfast Yogurt and Fruit Parfaits. These lovely, healthy, and delicious parfaits are scrumptious, and even the most picky little one will enjoy these. The main reason is, when you eat these Breakfast Yogurt and Fruit Parfaits it feels like dessert, and who doesn’t like eating dessert for breakfast?
Inspiration for this came the way much of my inspiration comes, I looked in my refrigerator and pieced together the left over food. I guess, I feel my meal ideas is a continual Chopped contest. (Am I the only one?!) I really try not to waste. There I was, I had everything I needed in my fridge and cupboard. I pieced these together in about 10 minutes.
The best part about these is that you can totally make these the night before, for meal prep. This makes for an easy grab and go breakfast. And if you have a mason jar, you could totally take it with you. Just don’t forget your spoon;-)
Another great perk to this breakfast is that one could change the fruit depending on the season or preference, and the template for making it would be the same. It would be just as delicious. Yogurt and Fruit Parfaits
Equipment
- Mason Jars
Ingredients
- ½ cup Yogurt Use your prefered type
Fruit Puree
- ½ cup Fruit puree I used peach and strawberry, frozen would work fine.
- 1 tbs honey This could be increased or decreased depending on taste.
- ⅛ tsp salt
Fruit
- 1 cup Fruit Roughly chopped (I used peaches and strawberrries) Use your favorite. Cherries, nectarines, melon, oranges, blueberries..possibilties are endless
Grain Mixutre
- ½ cup Grain (musli ceareal) Use your favorite grain or nuts ( oats, granola, cooked quinoa, or spelt) The possibilites are endless.
Instructions
Fruit Puree
- Add about 1/2 cup of fruit and 1 tablespoon of honey to the blender. Blend until smooth.
Breakfast Yogert Parfait
- Add about 2 tbs of Yogurt to the bottom of the jar, spread out with a spoon.
- Add about 3 tbs of Fruit Puree
- Add 3 Tbs of chopped fruit.
- Add 2 tbs of Musli or prefered grain.
- Repeat steps 1 more time, and top with fruit and grain.
- Enjoy!
