Pre heat the oven to 350° F. Add parchment to line a baking sheet.
Cream together the butter, granulated sugar, brown sugar, and vanilla and eggs on medium until they are creamy and well combined.
In a separate bowl combine the flour, baking soda, and salt.
Slowly add the flour mixture to the creamed butter and sugar. Sprinkle in ⅓ of the bowl at a time.
Mix on low until combined. Do not overmix.
Add the chocolate chips and chopped dates.
Mix on low until just combined.
Refrigerate the dough for 30 minutes (or overnight).
Use a tablespoon and scoop out 9 to 12 cookies per baking sheet.
Bake the cookies for 11 minutes for a soft chewy cookies or 13-14 minutes for a more crunchy cookies at 350°
