Oil a medium sized non stick pan.
Turn on the heat to medium and wait to hear a sizzle.
Add the egg whites to the pan and roll the pan around so that the egg white is thin and well distributed to the whole pan
Add the salt, pepper, onion powder, and powdered cumin to the eggs.
Cook for 2 min till the top is just firm and not liquid.
Using a large flexible spatula( sometimes two, one on each side) , flip the egg whites.
As the other side cooks add cheese and chicken to one side of the quesadilla
Cook for 1-2 min.
Slide quesadilla on the plate
Add the salsa, avacado, lime, then sprinkle with cilantro and onion.
close up the quesadilla and enjoy.
