Sweet, dense, cinnamony quick bread that is great with tea or coffee.

On our homeschool days we have to work on our various subjects, language arts, math, history. As we worked on History we realized the assignment today would be baking. Who would have know that baking would be incorporated into history. This week my daughter was learning about James Madison and his wife Dolly. Apparently Dolly Madison was an accomplished baker, entertainer, and was responsible for saving many famous portraits and pictures when there was a raid on the Whitehouse in 1812.
Part of my daughters assignment to get in touch with history was to bake some of Dolly Madison’s recipes. This Woodbury Tea cake was what Dolly Madison would serve with tea to her guests at the white house. (How fancy!)
Its a simple quick bread and it has only 6 ingredients. The cinnamon flavor us up front and delicious. With 2 tablespoons of cinnamon, there is a lot in this little cake. It is perfect breakfast cake, because it is not to sweet and pairs very well with tea coffee, or fruit.
I love anything cinnamon with cream cheese frosting, therefore my Tea cake had to be slathered in Cream cheese frosting. I have found that when this cake is paired with my delicious cream cheese frosting and a dusting of cinnamon sugar, it tastes remarkably like a fresh cinnamon roll! Without all the rolling and, proofing …etc. This little baby will be ready in about 30 min flat, WITH bake time!
As if you needed more reasons to bake this cake, it also adds the most amazing scents to your house, as it bakes your house will fill with the warm spicy, and sweet aroma of caramelized sugar and cinnamon. Once you try this cake, you wont be able to stop eating it. Again it isn’t too sweet, but it is dense and chewy in texture is addicting. With only has 2 tbs of butter, another piece wont hurt, right?!? (not including the frosting’s calories, because the frosting doesn’t count;) Pretty soon its all gone. The good news is , it is a flash to bake up a new batch. So, what is stopping you? Hurry up and try this spicy Cinnamon Tea cake, it will warm up your belly and your home on these cold summer mornings.
Cinnamon Spiced Tea Cake with Cream Cheese Frosting
Equipment
- 8×8 glass baking dish
Ingredients
Cinnamon Tea Cake
- 3 TBSP Butter
- 1 cup Sugar
- 2 cups Flour
- 2 TBS Cinnamon
- 1 cup milk
- 1 tsp Baking powder
Cream Cheese frosting
- 4 TBSP Butter (room temperature)
- 4 oz Cream Cheese (1/2 package, Softened)
- 2 cups Powdered Sugar
Instructions
- Preheat your oven to 350 degrees. Grease your 8×8 baking dish, and line it with parchment if you wish.
- First cream together your butter and sugar for about 2-3 minutes, or until nearly white and well combined.
- Second- add together the cake flour, cinnamon, and baking powder.
- Third- Sift 1/ 3 the flour, cinnamon, baking powder mixture into your stand mixer, the pour 1/2 of the milk in. Use the wisk attachment and mix until just combined.
- Repeat this process and end by adding in the last of the Flour, cinnamon, baking powder mixture.
- Allow to whisk for about 10- 20 seconds or until just combined. Do not over mix.
- Scape cake mixture out into a 8×8 greased pan.
- Bake for 25-30 minutes or until the cake is slightly browed around the edges and a toothpick inserted in the center will come out clean, Allow to cool for 30-60 minutes.
Cream Cheese Frosting
- Cream together the 4 TBSPs of butter and 4oz of cream cheese with the paddle attachment or a hand held mixer until smooth (about 2-3 min)
- Add in 1 tsp vanilla, mix until combined
- Slowly add in confectioners sugar 1/2 cup at a time, mix on the lowest setting … slowly unless you want your kitchen dusted with powdered sugar.
- Spread cream cheese frosting all over the top of your cooled Cinnamon Tea Cake, dust with some cinnamon and sugar. Enjoy!
