This delicious mocktail is one of my absolute favorites. There are simple ingredients, and it is so easy to put it together. I use Lyre’s NA White Cane Spirit which is a non-alcoholic Rum, additionally I use a shrub, called Purely: pineapple Thai Chili, both of these add such great flavor to the drink. However they can be omitted if you do not have them on hand, and the drink will still be super tasty. The fruit forward drink first hits you with tropical pineapple, then comes the mint, and finally the subtle heat of the jalapeno syrup. It really is a flavor journey that you will want to take again and again. Give it a try, you will be so glad you did.
Tropic Thunder: Pineapple Jalapeno Mint Mocktail
This drink is sweet, tropical, herbal, and spicy… it is truly the perfect sip.
Ingredients
- 1 oz Jalapeno Syrup
- 1/4 oz Pineapple Shrub * optional Purely's Pineapple Thai Chili
- 1 oz Non-Alcoholic Rum NA Lyres, or Ritual proof
- 1/4 oz Fresh Lime Juice
- 6 leaves Fresh Mint Muddled or blended.
- 2 oz Pineapple juice
Instructions
Jalapeno Syrup
- 1/2 cup of sugar with 1/2 cup of water and 1 jalapeno sliced.
- Heat until sugar is dissolved.
- Allow to steep, and cool.
- If you want a spicier syrup add more jalapeno and muddle them in the syrup.

- Add all ingredients to a blender, blend until smooth about 30 seconds, and pour over crushed Ice. Ganish with Mint, and a slice of pineapple
