Hi there, if you are like me then you are constantly looking for healthy side dishes for the holidays. I just recently lost 25lbs and I am continually in pursuit of making healthy lifestyle choices, even on the holidays. So, today I have an absolutely delicious and healthy side dish, Roasted Truffled Cauliflower. This dish is absolutely amazing and super easy. The cauliflower is sliced, and tossed in a light coat of olive oil, truffle powder, salt and pepper. It is then roasted until nicely caramelized, then it is drizzled with some sweet tart balsamic vinegar. That’s it. If you are like me you might add a sprinkle of shredded Parmesan and some parsley. It is seriously so good, it might become your favorite dish this holiday season. Make it today, ya know just to make sure its good:-)
Roasted Truffled Cauliflower
Ingredients
- 2 heads Califlower Sliced into flat bite sized peices
- 4 Tbsp. Olive oil
- 1 tsp truffle powder I got mine at Trader Joes
- ¾ tsp Salt or to taste
- ¾ tsp Pepper
Roast for 35-40 min on 375
Add these RIGHT after you get it out of the oven ( have it ready before hand)
- 4 Tbsp. Balsamic Vinegar
- 3 Tbsp. Shredded Parmsean
- 2 Tbsp Parsley (chopped)
Toss and enjoy Hot!
Instructions
- Pre heat the oven 375° and line a baking sheet with parchment paper.
- Chop the Cauliflower into thin slices about ¼ thick.
- Place chopped cauliflower onto the baking sheet and use your hands to toss with olive oil, salt, pepper, and truffle powder.
- Place into the preheated oven for 35-40 minutes or until the edges of the cauliflower are nicely caramelized.
- Remove baking sheet from the oven and immediately add the balsamic vinegar, and parmesan.
- Finally sprinkle with parsley right before serving. This dish is best served piping hot!
