Summer is here, and oh man, have I been looking forward to it. Sunshine, sand, salt, and ocean water. BBQs, the smell of grilled food in the air, bonfires at night, and the aroma of smoke in my hair . Fresh watermelon dripping down your hands and face as you bite into a deliciously ripe piece. And of course, ice cold drinks to cool me down as I sit in the blazing hot sun while working on my tan 😉Â
This is where this recipe comes in. This recipe is inspired by a drink that I used to order at a restaurant in Carlsbad, CA called Bistro West, called “Tropic Thunder.” It had pineapple juice, lime juice, jalapeno syrup, mint, and rum….need I say more. Yum.Â
Sadly Bistro West has closed its doors but, this cocktail was one of my favorites on their menu. I have tried my best to recreate it in my kitchen, and I think I have finally nailed it. This is a non-alcoholic version but it could easily be mad into an adult beverage with the addition of an ounce of rum or vodka. I hope as you sip this cocktail it will take you to a place in your mind where your toes are buried in warm soft sand, the roar of the ocean is in your ears, and you feel the summer sun’s heat on your skin…that place in your mind that is is eternally summer. Enjoy!

Ingredients
- 1 1/2 tsp Zest from 2 limes
- 1/4 cup Lime Juice (Juice from about 2 limes)
- 1 8.5 oz Pineapple juice (8.5 ounce)
- 1/2 cup Jalapeno Syrup***
- 2 cups Ice
- 1/2 cup Fresh mint (rough chopped)
- 1/2 cup Simple syrup **
**Jalepeno Simple Syrup
- 1/2 cup sugar (dry measures)
- 1/2 cup Water (wet measures)
- 2 whole Jalapenos sliced. stems discared
Simple Syrup
- 1/2 cup Sugar
- 1/2 cup Water
Instructions
Jalapeno Syrup
- Add 1/2 cup of sugar, 1/2 cup of water, and sliced Jalapenos to a medium, and heat on medium high heat until the sugar is completely dissolved. Cool the solution. Syrup will keep refrigerated for a up to a week.
Pineapple Jalapeno Mint Mocktail
Simple Syrup
- Add 1/2 cup of sugar and 1/2 cup of water to a medium, and heat on medium high heat until the sugar is completely dissolved. Cool the solution. Syrup will keep refrigerated for a up to a week.
- In a clean blender add ice, pineapples, mint, lime juice, lime zest, simple syrup, and jalapeno syrup. Blend together, until well combined. Enjoy. Makes about 6 servings.
