Life is busy, and being a busy homeschool mom, (or a parent in general), it is really hard to take care of myself. I do really try. I try to do lots of things, like exercise, and rest. Creative outlets like blogging,and of course baking and mocktail making are things I do almost everyday. The other thing that I really try to do is eat healthfully. I am not a true believer in any one diet craze, but I try to apply a little of each to my own life. I do try to eat plenty of protein and healthy fats, and this is what inspired my Keto Quesadilla. It is delicious Mexican eats with out any of the cheats. All protein and healthy fats! I think even your non-keto friends would love this one.
Quick and easy
It comes together in about 5- 10 minutes and the egg white tortillas can even be made ahead and microwaved with cheese if you are food prepping. These Keto Quesadillas, are super easy and delicious! I hope I have talked you out of any excuses not to make these. They truly are scrumptious, give em’ a try.
Keto Quesadilla
Ingredients
Keto Quesadilla (individual)
- ½ cup egg whites about 3 egg whites
- ⅛ tsp Salt
- ⅛ tsp Black Pepper
- ⅛ tsp cumin
- ⅛ tsp Onion powder
- ¼ cup Mexican Cheese Mix
- ¼ cup Ground Beef any seasoned and cooked protein will work.
- 2 tbs Tomatillo salsa ( or your favorite salsa)
- 1 tbs Cilantro (fresh, chopped)
- 1 tsp Green onion fresh chopped
- 1½ tps Avacado (sliced) **optional
- ⅛ tsp Tajin
- 2 slices of lime
Instructions
Keto Quesadilla
- Oil a medium sized non stick pan.
- Turn on the heat to medium and wait to hear a sizzle.
- Add the egg whites to the pan and roll the pan around so that the egg white is thin and well distributed to the whole pan
- Add the salt, pepper, onion powder, and powdered cumin to the eggs.
- Cook for 2 min till the top is just firm and not liquid.
- Using a large flexible spatula( sometimes two, one on each side) , flip the egg whites.
- As the other side cooks add cheese and chicken to one side of the quesadilla
- Cook for 1-2 min.
- Slide quesadilla on the plate
- Add the salsa, avacado, lime, then sprinkle with cilantro and onion.
- close up the quesadilla and enjoy.
