I have a sweet tooth. This may not come as a total surprise to you if you have looked at my blog. Most of my posts are desserts. However, I still try to eat healthfully. This recipe is an attempt to have my cake and eat it too, so to speak. By that, I mean enjoy an indulgent dessert and still eat healthfully.
This dessert uses pomegranate juice and delicious spices like cinnamon, cloves, and ginger to create a delicious syrup. When you poach your pears into this syrup it adds a sweet pear undertone to this lovely sauce. The pears only take about 15 minutes to poach. They syrup is used on the top, and even though I use mascarpone cream because of its delicious creamy flavor and silky texture. You could easily substitute Greek yogurt and have an even more healthful treat.
Finally, one of the greatest perks of this recipe is the Spiced pomegranate syrup. If you have any left over, it is great in cocktails, on top of ice cream, or oatmeal. Last year I used this poaching syrup to make pomegranate spiced meringues. Spoiler alert… they were amazing! They gotten eaten faster than the chocolate swirled meringues… which is saying a lot.
Give this recipe a try, even your pickiest eater and health food haters will love this one.
