I am always looking for creative and complex drink inspiration. I was sipping iced green tea the other day, and I thought this would go really well in a drink! Boy oh boy did it! I combined the green tea with a bit of sage simple syrup, bitters, some lime, and a bit of aquafaba (the juice from chickpeas) and the color and flavor were quite refreshing. This is a mocktail, but there is always the option of adding gin, vodka, or even prosecco or champagne if you want a spirited option.

Taste

This drink is a lovely complex sip. The green tea brings a subtle flavor, then there is a bit of sage infused syrup. The sage is herbal and earthy, then there is a bright flavor of lime. Finally, the drink is topped with some foamy aquafaba it gives this drink some texture, and its lovely foam. After a quick shake over ice, all that is left is a splash of bitters. They add some contrast to the light green sweetness.

I love this drink because it tastes so complex, it is definitely not your non alcoholic type super sweet “shirly temple” drink. Plus it is just plain gorgous! If you have a few extra sage leaves put them on top as a garnish for a lovely beautiful and delicious drink. I recommend you make this for your next get together or weekend sip.

Green Tea and Sage Sour Mocktail

Ingredients Equipment Method

Ingredients
  

Makes Two Drinks
  • 4 oz Green tea (steeped)
  • 2 oz Sage Simple Syrup recipe to follow
  • 1 oz Lime juice fresh
  • 1 oz Aquafaba
  • 1 cup Ice
Shake
  • 2 oz Bitters Fevertree non alcoholic
Sage Simple Syrup
  • ½ cup Granulated Sugar
  • ½ cup Water
  • 4-6 leaves Sage leaves (roughly chopped)

Equipment

  • Cocktail shaker

Method
 

  1. Combine the first four ingredients in a shaker with some ice.
  2. Shake vigorously for 30 seconds.
  3. Pour into your glass without the ice and carefully pour the bitters in alon the side.
  4. Garnish with a sage leaf and enjoy!
Sage Simple Syryp
  1. Combine sugar, water and chopped sage leaves in a small sauce pan.
  2. Heat until the sugar is dissolved.
  3. Let set for 30 minutes to 1 hour
  4. Strain into sterilized container. Will keep covered and refrigerated for up to 1 week.
