I have to share an embarrassing fact, Vanilla is my favorite flavor. Being a foodie, I should love elderflower or lavender, matcha , miso or one of the hundreds of other lovely flavors. Don’t get me wrong those flavors are delish. They have a seat at my table, but if I you ask my to pick my favorite flavor it is definitely Vanilla.
Vanilla Takes the Lead Roll
I love the fragrant flavor the way it blends with almost any other sweet flavor. Vanilla’s flavor is prominent but it is also a flavor the shares the “flavor stage” very well. If one to pair vanilla with berries, fruit, or even floral flavors it blends so well without disappearing. Since vanilla is so good at sharing, I thought that it was about time for it to take center stage and be really really bold.
Secret Ingredients
These Vanilla Bean Sourdough scones are unapologetically vanilla flavored. They have vanilla in the scones, and the glaze. They smell so heavenly as they bake, the vanilla scent emanates throughout your house, and those 35 minutes of bake time become the longest minutes of your life. These scones have 3 Tbsps. of vanilla, and a secret ingredient that accentuates the vanilla flavor…it is milk powder.
Waste Free Baking
Another cool part of these scones is that they are a great way to use your sourdough starter discard. That means no need to feed your starter, just pour off the excess starter into the scones. The sourdough starter adds complexity and depth to this already tasty baked treat.
Make the ahead
One of the best things about these scones is that they can be made the night before and chilled overnight. They will be ready to be baked off to perfection, whenever it is that you decide to wake up. That makes these the perfect choice for family get togethers, or an easy breakfast in bed. Let me tell you these are phenomenal on their own, but with coffee, and some lemon curd, or berry preserves…. they are ahhhhh -mazing! They come together quickly and are the best scone you will ever have!

Equipment
- Food Processor or fork, or fingers.
Ingredients
Vanilla Bean : Dry Ingredients
- 1 1/2 cup AP Flour
- 1/2 cup Granulated Sugar
- 2 Tbsp Milk Powder
- 1 tsp Baking Soda
- 1 tsp Salt
Vanilla Bean: Scones Wet Ingredients
- 1/2 cup Butter (Very Cold) cut up into Tbsp peices
- 3 Tbsp Vanilla Extract
- 1 1/4 cup Sourdough Starter Discard or **1 Cup of Buttermilk
Vanilla Glaze
- 1 cup Powdered Sugar
- 3 tsp Vanilla
- 3 Tbsp Milk
Instructions
- Line a baking pan with parchment paper of spray oil Set aside.
- Add Flour, Sugar, Milk powder, baking Soda and salt to your food processor and pulse until just mixed. (if mixing by hand whisk until all the dry ingredients are combined.
- Add the cold butter cut into TBSP pieces to the food processor and PULSE 10-15x until you see small pea sized pieces of butter throughout the flour mixture.
- Add 1 1/4 cup of Sourdough Starter ****OR 1 cup of Buttermilk at this point
- Add 3 Tbsp of Vanilla extract
- Pulse 5-10 times only. DO NOT OVER MIX.
- The mixture should be crumbly and barely hold together.
- Lightly dust a counter with flour and turn the scone mixture onto the counter.
- Gently press the scone mixture together into a disk about the size of a Frisbee it should be 1 inch to 2 inches thick. You want 1-2 thick Frisbee shaped scone dough.
- Cut the dough in half Then cut in 4ths Then cut in 8ths.
- This will create 8 triangular shaped scones. use a spatula to place them on the baking pan.
- Cover with plastic wrap and place the scones in the Refrigerator for at least 30 min to overnight to chill the butter.
- Pre heat the oven to 350 degrees F.
- Take the chilled scones out of the refrigerator and place into the oven.
- Bake for 35-45 min.
- Remove the scones from the oven and allow to cool.
Vanilla Glaze
- Sift the powdered sugar to a medium sized bowl.
- Mix in vanilla an d milk until well combined.
- Pour over the Scones and enjoy.
