Well hello there, if you are here you are probably wanting the recipe for these Triple Chocolate Salted Caramel Cookies. That is coming ( unless you just clicked “jump to recipe”, but first let me share a little about these cookies.
My inspiration
The inspiration for these cookies came because, it was bout 10 at night, and I had a major sweets craving for chocolate and caramel, I started tinkering in the kitchen, and I came up with this recipe. This is a two bowl cookie dough, and the dough alone is decadent and delicious. However, if you add that salted caramel, it puts this baby over the top. I may or may not have eaten almost all of my final test batch. And, they may or may not have been my dinner last night… ah hem.
The taste experience
How do they taste you ask? The cookie batter is super fudgy due to the chocolate chips, cocoa powder, and melted chocolate in the cookie dough. Once the dough comes together, there is really no need to refrigerate the dough, although just like with most foods, the flavors combine best over time. So, if you can bring yourself to wait overnight…they taste even better. Then when you stuff these cookies with caramel, and seal it up tight so none leaks out, they are over the top flavor explosion.
Be prepared
These come together pretty quickly, I will say to read the recipe first and get all your ingredients ready before you make them, it will make the whole process easier. All told, these cookies are about a 20 min prep and 10-12 min for each batch.
Warning….
Finally a warning…. Triple Chocolate Salted Caramel Stuffed Cookies are not for the sugar avoiding type. These are not gluten free or vegan. Triple Chocolate Salted Caramel Stuffed Cookies are not for someone with a vast amount of self control, or someone who only wants a small taste. These cookies are a for diving headfirst into a sea of chocolate and caramel, and swimming around with zero regrets. Only when you dive into that sea of chocolate and caramel, make sure you bring a glass of milk with you.
Triple Chocolate Salted Caramel Stuffed Cookies
Ingredients
Wet Ingredients
- 1 cup Butter (softened)
- ¾ cup Brown Sugar
- ⅔ cup Granulated Sugar
- 1 tsp Vanilla extract
- 2 lg Eggs
- ⅔ cup Melting chocolates
- 1 cup Mini semi sweet chocolate chips You can use chuncks or regular sized chocolate chips also
- 24-30 wrapped Chewy Caramels
Dry Ingredients
- 1 cup Cocoa Powder (sifted)
- 3 Cups All purpose flour
- 1½ tsp Baking soda
- 1 tsp Salt
Instructions
Triple Chocolate Cookie Dough
- Pre heat your oven to 350° and add parchment paper to your baking pans.
- In a large mixing bowl combine the butter and sugar together mix on medium until well combined and creamy.
- Crack your eggs into a separate small bowl and then add them to the sugar and butter, mix until well creamed on medium high for about 1 minute.
- Melt your chocolate in the microwave 10 seconds at a time. (usually take about 3x or 30 seconds) Each time stiring vigorously, until completely melted.
- Add the melted chocolate to the butter mixture. Mix on med- high until well combined.
Dry Ingredients
- In a separate bowl add the cocoa powder, flour, salt, and baking soda together. Whisk until well combined.
- Slowly add about ¼ of the dry ingredients to the wet, mix until just incorporated. Repeat until all the dry ingredients are mixed well and combined.
- at this point the dough should be a little on the dry crumbly side.
Stuffing the Cookies
- Unwrap caramels first and have them ready to go.
- Scoop about 1¼ tsp of cookie dough and flatten it out. The bottom should be a little thicker than the top.
- Then place the caramel ontop of the flattend dough and sprinkle with salt.
- Scoop another tsp of dough and flatten it to form a top.
- Carefully seal the edges of the two peices of cookie dough an make a round cookie.
- Repeat about 6 x per cookie sheet.
- Make sure to spread the cookies out.
- Place in your pre-heated oven for about 11 minutes. If they are still doughy put them in for about 1 minute at a time longer until the cookies are fully cooked.
- Make sure to allow time to cool (15-30 min), you could burn your mouth if you bite these right out of the oven. (you could speed this up by putting the cookie sheet in the freezer for 10 min.
- Enjoy with a tall glass of milk!
