During the holidays there is a lot to think about. Back in November maybe a Christmas party seemed like a great idea…it does now only you have to clean the house and plan the meal with only a few days left till guests arrive. I have been in this situation more times than I can count. The answer for me is keep it simple. Clean the house and make some delicious…EASY food that everyone will enjoy, and I will get to hang out with my guests and not hovering around the kitchen the whole time. These Cranberry Gouda Bites are just the thing if you need a quick and easy appetizer. They come together very easily and are so good, I doubt that you will have any left at the end of the evening.
These Cranberry Gouda Bites are made with puff pastry gouda cheese and fresh thyme. 8 ingredients and you are going to have quite the delicious mouthful. They really only take about 15 minutes to make. Give them a try at your next get together, they will be a hit!
Cranberry Gouda Bites
Equipment
- 6 oz Cranberry Sauce I prefer the chunky style caned
Ingredients
- 1 package Puff Pastry Package cut into 24 squares
- 1 egg Egg for egg wash
- 12 oz Gouda Cut into 1/2 rectangles
- 6 oz Cranberry Sauce chunky style
- 1/4 tsp Cinnamon
- 1/8 tsp Nutmeg optional
- 1/8 tsp ginger optional
- 5 sprigs Thyme (fresh) Rosemary, basil, Sage, would be amazing in this as well
- 6 oz Chopped toasted pecans Optional.
Instructions
Puff Pastry
- Preheat the oven to 375
- Use your egg to scramble into an egg wash
- Cut your Gouda into 1/2 inch rectangles (more flat than thick)
- Line your pan with parchm
- Unroll the puff pastry and cut each of the 2 squares into 24 small square by cutting the puff pastry into 4 strips by 6 strips.
- Paint egg wach on the top of all squares.
- Stack two squares for each appetizer
- Place the cheese on top
- Place on the baking sheet and cook 10-12 minutes or until golden brown and the gouda is nice and melted
- Meanwhile add the cinnamon, ginger, and nutmeg to the cranberrry sauce.
- Place the Cranberry sauce in the microwave for 1min to 1 min and 30 seconds. Until the sauce is Not hot but very warm.
- Put 1/2 tsp of Cranberry sauce on the puff pastry.
- Place a leaf or two of thyme on top of the cranberries, and Enjoy
