I love summer berries one of my favorite berries is the BlackBerry. Sweet, and tart, with a bite of bitterness they are the perfect berry.
I was thinking I love Lemon Bars what if I made a BlackBerry Bar cookie. Then swirled it with a small amount of cream cheese frosting dolloped on the topping of the blackberries. A beautiful design, and color from the blackberries is A Feast for the eyes first and then the tummy.
In addition I tried to make it this recipe really easy by using Betty Crocker Sugar Cookie mix for the crust(BTW, this is not a sponsored post the mix just makes the recipe easier, it’s yummy, and I really use it).
The result? Let’s just say my Taster’s AKA my family, ate these cookies up quickly. I did do an adjustment in this recipe in that I strained out the seeds of the blackberries. But if you don’t mind them you could skip that step. These are sweet tart and scrumptious, I hope you give these a try today!
Blackberry Cream Cheese Swirl Bars
Equipment
- Blender
- Fine mesh strainer
Ingredients
Sugar Cookie Crust
- 1 pkg Sugar Cookie mix (I used Betty Crocker brand)
- 1/2 cup Butter (1 stick) softened
Blackberry Filling
- 2 cups Blackberries
- 4 eggs Eggs
- 1 cup sugar
- 1/4 cup flour
Cream Cheese swirls
- 4 oz Cream cheese (softened)
- 1 cup Confectioners Sugar
- 1 tsp vanilla
Instructions
Sugar Cookie Crust
- Pre heat the oven to 350 degrees, and spray your 8×8 pan with nonstick spray, or line with parchment paper. (makes cutting the bars easier)
- Combine Sugar cookie mix with the egg and butter with a mixer. Hand mixer or paddle attachment for kitchen aid.
- Once the Sugar Cookie crust is mixed, press it evenly into the 8×8 pan.
- Bake in the oven for 10- 12 minutes until slightly golden around the edges.
Blackberry Filling
- Using a blender blend together the berries, Use a fine mesh strainer to strain out the seeds. Discard the seeds.
- Add the strained blackberry mixture (about 1 cup), and the sugar and eggs, together and whisk until well combined.
- Add flour little by little until well combined.
- Pour the Blackberry mixture onto cooled Sugar cookie crust.
Cream Cheese Swirls
- Add 1/4 oz. (half a package) of Cream Cheese, to mixer and mix until softened and creamy.
- Add the Confectioners sugar, and vanilla. mix until well combined.
- Drop about 9 tsps. of Cream cheese into the blackberry mixture and use a wooden skewer to swirl (not too much or it will get muddy)
- Put into the oven for 25- 30 minutes. Cool completely in the refrigerator before eating.
- Once cooled, use the parchment to take the bars out of the 8×8 pan and cut into squares on the cutting board. Finally Enjoy!
